Adapted from http://thegirlwhoateeverything.blogspot.com/2010/02/apple-muffins.html PLEASE NOTE: where it says 1 tbsp it's vanilla extract. CC knows what it is, but you don't, so I'm telling you :) I fixed the nutrition grade! It's healthier because I added an extra cup of apples (those are healthy, right?) and decreased the sweetener down from 2 & 1/2 c. sugar. I felt like there is too much oil - if I make these again I plan to cut down the amount of oil because the muffins did come out a little more oily than I liked. Personally, I wasn't thrilled with these muffins (I thought the extra cup of apples made it a little too much), but my husband's ENTIRE family DEVOURED them and begged me for the recipe, which is a minor miracle. So... enjoy! :)

Recipe Ingredients for Apple Muffins

2/3 c honey
2 large eggs
1 cup vegetable oil
1 tbsp
3 cups whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
4 cups apples (peeled, cored, diced)

Recipe Directions for Apple Muffins

  1. Preheat oven to 350 degrees.

  2. Cream together honey, eggs, oil, and vanilla

  3. Add dry ingredients to creamed mixture.

  4. The batter will be very thick.

  5. Add the diced apples.

  6. Butter & flour muffin tins or use paper liners.

  7. Fill muffin tins to the top.

  8. Bake at 350 degrees for 20-25 minutes. Makes 24 muffins.
