Recipe Ingredients for Apple Muffins

3 tablespoons energ egg replacer
1/2 cup oat flour
1/2 cup brown rice flour
1 pinch ground nutmeg
2 oz pumpkin, canned
1/3 cup splenda
1 cup rolled oats
1 apple, peeled, grated
2/3 cup apple juice
1 pinch ground cinnamon

Recipe Directions for Apple Muffins

Preheat oven to 350F. Grease 12 muffin pans. Sift first 4 ingredients together in a bowl. Rub in butter until mixture resembles coarse meal. Stir in sugar and oats with a fork, making a well in the centre. Stir in remaining ingredients until just combined. Fill muffin pans half full with mixture. Bake about 20 minutes or until golden.
