can use any fruit, not sure about wet/dry ratio b/c I haven't made them yet

Recipe Ingredients for Apple Muffins

1 cup wheat bran
1/2 cup cereal
3/4 cup whole wheat flour
2 tsp flax seeds
1 tsp cinnamon
1/2 tsp cloves
113 g applesauce, unsweetened
1 cup light soy milk
1 tbsp lemon juice
1 egg
1 tsp vanilla extract
1 tsp baking soda
1 tbsp baking powder
1/2 tsp salt
1 cup apples, peeled and chopped
1/4 cup raisins
7 dates, chopped

Recipe Directions for Apple Muffins

  1. preheat to 375

  2. mix bran and milk and let stand 10mins

  3. mix wet ingredients

  4. mix dry ingredinets

  5. add bran mixture to wet

  6. add wet to dry

  7. mix until just mixed

  8. fold in fruit

  9. bake 15-20mins
