a hearty fruit bread made without eggs, oil, dairy or sugar

Recipe Ingredients for Apple muesli bread

1 1/4 cup whole wheat flour
3/4 cup ground flaxseed
1/2 cup wheat germ
2 tsp baking powder
1/4 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1/2 tsp ginger
1/4 tsp nutmeg
1 cup apples (peeled and sliced)
1 cup peaches (peeled and sliced)
1 small ripe banana (mashed)
1/4 cup soy milk
3 tsp vanilla
1/2 cup applesauce
3/4 cup honey
1 cup oats (actually muesli)

Recipe Directions for Apple muesli bread

  1. preheat oven to 350F

  2. mix dry ingredients (whole wheat flour, wheat germ, flax flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg)

  3. in another bowl, mix the wet ingredients (banana, applesauce, vanilla, soy milk, honey)

  4. mix wet ingredients into dry ingredients until moistened

  5. fold in apples, peaches and muesli

  6. grease an 8 1/2 x 4 1/2 loaf pan with butter, margarine or non-stick spray

  7. pour batter in loaf pan. bake for about 55-60 minutes until dark brown, or until a toothpick inserted in the center comes out clean (this time may vary depending on your oven)

  8. Let cool in the pan on a rack for at least 10-15 minutes before unmolding to cool completely on the rack
