Apple and Leek Stirfry Recipe

Makes 7 servings



3 apples, 3 carrots, 2 med/lge leeks, 2 zucchinis, 2 bell peppers red & green. stirfried till tender.

Recipe Ingredients for Apple and Leek stirfry

600 grams Apples
337 grams Leeks
1 cup, chopped Peppers, Sweet, Green
250 grams Squash, Summer, Zucchini, Includes Skin
220 grams Carrots

Recipe Directions for Apple and Leek stirfry

  1. oil & salt optional, i prefere none.

  2. apples, (1 red, 1 green, yellow cubed 2cm approx)

  3. leek sliced (1/2cm approx)

  4. zucchini (cut 1/2 vertically & sliced horizontally)

  5. carrots ( cut in 1/2 vertically & sliced horizontally , very thin)

  6. bell peppers (1 green, 1 red, cubed)

  7. place all ingredients into deep frypan, no oil, add lid

  8. (lid provides moisture)

  9. Med/low heat.

  10. stirring gently floding, every 2-3 min, so veg don't stick to pan.

  11. replace lid after each stir.

  12. Approx 15 min cooktime.

  13. 5-8 min prep.

  14. serve as is or with brown rice/ quinoa/ or salmon for extra carbs/protein.

  15. -If concerned about sugar, remove 1 to 1/2 apples and replace with any veg you like (calculating calories for your self)

  16. -On it's own is quite filling.

  17. Approx 220g per serve.
