Delicious, light, airy, and full of fiber. Original recipe claims 12 pancakes, but we got 10.

Recipe Ingredients for Apple and Flax Pancakes

5/8 c all-purpose flour
5/8 c whole wheat flour
1/3 c flax seed, coarsely ground
3 T Splenda, replaces granulated sugar
1 T baking powder
1/2 tsp salt
1/4 tsp cinnamon
1 dash of nutmeg
2 egg whites, beaten stiffly
1 1/4 c skim milk, replaces 2%
3 T butter, melted
1 c apple, pared and shredded (shred just prior to adding butter)

Recipe Directions for Apple and Flax Pancakes

  1. In a large bowl, combine flour, ground flax, sugar, baking powder, salt, cinnamon, and nutmeg.

  2. In a medium bowl, lightly beat together egg yolks, milk, and butter.

  3. Add liquid ingredients to the dry, and stir just until combined.

  4. Shred apple, add to batter; stir until just combined.

  5. Fold in egg whites.

  6. Preheat griddle or heavy fry pan to medium heat. lightly grease pan or spray with non-stick vegetable spray.

  7. Using a 1/3 C measure, pour batter onto pan.

  8. Cook pancakes until bubbles appear on surface (about one minute).

  9. Turn over and brown other side.
