These apple muffins are a great snack!

Recipe Ingredients for Apple Flax Muffins

1/4 cup ground flax seed
3/4 cup flour
3/4 cup whole wheat flour
1 egg
3 tbsp vegetable oil
1/2 cup whole milk
1 cup chopped apple
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar
1 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Apple Flax Muffins

  1. Mix wet ingredients (egg, oil, milk) together in one bowl.

  2. Mix all dry ingredients together in a separate bowl, then add to wet ingredients and mix gently until combined.

  3. Add apples and mix. Dough will be very thick.

  4. Spoon into greased muffin tin and bake at 400 degrees for 18-20 mins.
