Apple Flax Muffins Recipe

Sweet, cake like muffins full of apples and carrots and healthy fats -- woot!

Recipe Ingredients for Apple Flax Muffins

1/3 cup milled flax seed
3/4 cup whole wheat flour
3/4 cup brown rice flour
1/3 cup sugar
1 large apple, diced
1 large carrot, diced
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 tbsp coconut oil
6 ounces vanilla soy milk
1/2 cup slivered almonds
2 tbsp molasses
2 tbsp Apple Cider Vinegar, Unfiltered, Organic
2 tbsp cinnamon
1 tsp ginger
1/2 tsp nutmeg

Recipe Directions for Apple Flax Muffins

  1. Preheat oven to 350

  2. Mix all dry items together in a large bowl.

  3. In a sepperate bowl mix the wet ingrediants, pouring in the apple cidar vinegar last. It will curdle the milk so don't worry.

  4. Slowly pour the wet mixture into the dry and mix until batter is moist. (If a little dry add a splash more milk or for variation some chai tea).

  5. Grease a muffin pan. I used a jumbo muffin pan that makes 6 muffins, but you could make a doz regular muffins as well. Pour batter into muffin pan. Bake until muffins are firm to touch and tooth pick comes out clean in the center.
