Soft cookies with apple pulp and flaxseed meal

Recipe Ingredients for Apple and Flax Flatbread

216 g apples
223 g plain yogurt
42 g light brown sugar
1 1/2 cups flour
1/3 cup flaxseed meal
1/3 cup orange juice
1 1/2 cups water
1/4 tsp allspice
1/2 tsp cloves
1/2 tsp nutmeg
1 tsp cinnamon
2 tsp baking powder

Recipe Directions for Apple and Flax Flatbread

  1. Use pulp from apples (left over from juicing with commercial juicer). Mix all ingredients and bake in muffin pans. (Fill just under top).

  2. Bake 45 minutes at 400 degree Fahrenheit.

  3. Let cool 5-10 minutes.

  4. Turn out of pan and smashdown on cookie sheet.

  5. Bake an additional 15 minutes.
