Recipe Ingredients for Apple Filled Cinnamon Muffins

4 c diced apples
1/3 c brown sugar
2 egg whites
1/4 c yogurt
1 t vanilla extract
1/2 c whole wheat flour
1/2 c all purpose flour
1/2 t salt
1 t cinnamon
1 t baking soda

Recipe Directions for Apple Filled Cinnamon Muffins

  1. Preheat oven to 325 degrees.

  2. Butter and flour a mini muffin tin.

  3. Dice the apples, coat the apples in the sugar.

  4. In another bowl wisk the egg, yogurt, and vanilla until combined.

  5. In a third bowl mix the flours, salt, cinnamon, and baking soda.

  6. Add wet ingredients to the apples, stir to combine.

  7. Add dry ingredients to the apple mixture and stir till just combined.

  8. Spoon batter into prepped tin.

  9. Bake at 325 for 15-17 minutes or until toothpick comes out clean.

  10. Eat fresh from the oven or refrigerate leftovers.
