I use this as a salad dressing but you can also just enjoy the apples and onions as a side. I usually serve with lime chicken.

Recipe Ingredients for Apple Dill Salad Vinaigrette

2 med green apples
1/4 cup red onion
1 tbsp dill
1 tbsp peppercorn
1/4 cup cider vinegar
2 tsp sugar

Recipe Directions for Apple Dill Salad Vinaigrette

  1. Core and thinly slice the apples.

  2. Thinly slice the red onions.

  3. Mix sugar, cider vinegar, dill and peppercorns in a bowl.

  4. Add the apples and red onion and cover with vinegar mix.

  5. Chill for at least one hour and serve over salad. Makes 8 servings. About 1 Tbsp of vinegar and three slices of apples per serving
