Use less maple if you like less sweet muffins. For "fluffier" muffins, use whole wheat pastry flour.

Recipe Ingredients for Apple-Date Whole Wheat Muffins

2 1/2 cups whole wheat flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp baking soda
1/4 tsp salt
1 egg
2 medium apples
3/4 cup dates
1/2 cup nonfat yogurt
1/3 cup maple syrup

Recipe Directions for Apple-Date Whole Wheat Muffins

  1. Measure all of the ingredients into a bowl. Stir just until all dry ingredients are moistened. The batter may be lumpy.

  2. Put batter into prepared muffin pan and bake at 350 for approximately 20 minutes, or until a knife comes out clean.
