Recipe Ingredients for Apple Date Cheddar Muffins

1 egg
1/4 cup oil
1 cup skim milk
1/2 cup sugar
3/4 cup flour
3/4 cup whole wheat flour
1 tbsp. baking powder
1/2 tsp. salt
83 g light cheddar (about 1 cup grated)
200 g Granny Smith apples, peeled and diced (2 small apples)
1/2 cup dates, chopped
1 tsp. PAM

Recipe Directions for Apple Date Cheddar Muffins

  1. Preheat oven to 350 F.

  2. Grease muffin tin.

  3. Combine egg, oil, milk and sugar.

  4. Combine flours, baking powder and salt then sift into wet ingredients. Mix.

  5. Add cheese, diced apples and dates. Fold in gently.

  6. Transfer batter into muffin tin.

  7. Optional: Combine 2 tbsp. brown sugar and 2 tbsp. cheddar, and sprinkle over the muffins.

  8. Bake for 30 minutes.
