Another best of recipe, combining a biscuit bread pudding, custard bread pudding and apple bread pudding recipe from About.com>Southern Food. I left out pecans and raisins. It's in the oven now... we will see how it tastes!

Recipe Ingredients for Apple Custard Biscuit Bread Pudding

1 T butter
2 1/2 cups apples, chopped
1/4 cup brown sugar, packed
1/2 teaspoon cinnamon
1 cup skim milk
1 1/2 c evaporated skim milk
1/2 c half and half
6 biscuits, broken, about 2 1/2 c
1/4 cup molasses
1/4 cup granulated sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
3/4 c eggbeaters, about 3 eggs

Recipe Directions for Apple Custard Biscuit Bread Pudding

  1. Preheat oven to 350'.

  2. Melt butter in medium saute pan. Add apples, brown sugar, 1/2 teaspoon cinnamon. Cook over medium heat until tender. Pour apple mixture into a lightly buttered 2-quart baking dish.

  3. Combine the three milks, warm over stove or in microwave. Pour milk over biscuits.

  4. Combine molasses, granulated sugar, salt, vanilla, 1/2 teaspoon cinnamon, ginger, nutmeg, and eggs. Mix into with biscuit mixture. Pour mixture over apples.

  5. Set baking dish in a larger pan with about 1/2-inch of hot water. Bake at 350 for about 50 minutes, until set and firm, or when a knife inserted near center comes out clean.

  6. Serves 6-8.
