Apple Crunch Muffins Recipe

The topping on these muffins makes them a favourite in our house. I substituted the white and brown sugar from the original recipe with splenda to make them low calorie. You can also substitute the egg with liquid egg whites to reduce cholesterol.

Recipe Ingredients for Apple Crunch Muffins

1/4 cup splenda brown sugar blend (packed)
1/4 cup chopped nuts (pecans or walnuts)
1/2 tsp cinnamon
1 1/2 cups whole grain flour
1/2 cup splenda no calorie sweetener
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 cup margarine (non-hydrogenated)
1 egg (slightly beaten)
1/2 cup 1% milk
1 cup diced peeled apples

Recipe Directions for Apple Crunch Muffins

  1. Mix the first 3 ingredients (brown sugar, nuts, cinnamon) together and set aside for topping.

  2. Sift flour, splenda, baking powder, salt and cinnamon in bowl.

  3. Cut in margarine to form fine crumbs.

  4. Combine milk and egg, and add to dry ingredients along with apples.

  5. Stir just until moistened.

  6. Spoon batter into muffin cups filling 2/3 full.

  7. Sprinkle with topping.

  8. Bake at 375 degrees F for 15 minutes or until toothpick inserted in center comes out clean.
