Muffins made with oats, applesauce, apples, and cranberries

Recipe Ingredients for Apple-Cranberry Oatmeal Muffins

2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp baking soda
1 tsp. cinnamon
1/2 tsp. allspice
1/8 tsp. nutmeg
1 cup quick oats
1/2 cup brown sugar
2 eggs, lightly beaten
6 fl. oz. 2% milk
2 fl. oz. vegetable oil
1 cup applesauce, canned
1 cup apple, chopped
1 cup cranberries, chopped

Recipe Directions for Apple-Cranberry Oatmeal Muffins

  1. Mix dry ingredients. Stir through sugar. Make well in center.

  2. Mix eggs with milk, oil, and applesauce. Add to dry mixture and stir til just combined (batter will be lumpy). Fold in apples and cranberries.

  3. Bake 15-20 minutes or til toothpick comes out clean.
