This bread is delicious and so much healthier than the last one I made.

Recipe Ingredients for Apple-cranberry-ginger bread

2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup apple cider
1 tablespoon fresh ginger
2 tablespoons melted butter or margarine
2 tablespoons hot water
2 cups cranberries

Recipe Directions for Apple-cranberry-ginger bread

  1. In a large mixing bowl, combine dry ingredients.

  2. In another bowl, beat egg.

  3. Add juice, fresh ginger, butter, and hot water.

  4. Add to flour mixture, stirring just until moistened.

  5. Gently fold in cranberries.

  6. Spoon into greased 9-in. x 5-in. x 3-in. loaf pan.

  7. Bake at 325 degrees F for 60 minutes or until toothpick inserted near the center comes out clean.

  8. Cool for 10 minutes before removing to a wire rack
