Modified from an Apple-Cranberry Crumb Pie in Bon Appetit magazine (January '99). Used vegan butter and got rid of the pie crust. This was a great way for us to use up our leftover cranberry sauce.

Recipe Ingredients for Apple-Cranberry Crisp

1/2 cup all purpose flour
3/8 cup brown sugar, packed
1/4 cup old-fashioned oats
3/8 tsp cinnamon
1/4 cup vegan butter
2 large Granny Smith apples, chopped
8 oz cranberry sauce
3/8 cup white sugar
1/2 tsp cornstarch

Recipe Directions for Apple-Cranberry Crisp

  1. Make topping by mixing the flour, brown sugar, oats, and cinnamon. Add the butter by rubbing in with your fingertips until the mix resembles coarse meal. Set aside.

  2. Preheat the oven to 350 F.

  3. Toss the apples, cranberry sauce, white sugar, and cornstarch in a large bowl until well blended.

  4. Transfer the apple-cranberry filling into a baking pan, and sprinkle the topping over the filling. Bake until apples are tender and the crust is golden, about 45 minutes. Cool for 15 minutes. Serve warm with (soy) vanilla ice cream.
