Recipe Ingredients for Apple Cranberry Cake

2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup Splenda
1 tsp cinnamon
1/4 cup flaxseed meal
1/4 cup wheat bran
1/4 cup Egg Beaters
1/2 cup orange juice
1 cup cottage cheese, lowfat
1 apple, chopped
1/2 cup Cranberries, chopped
1/2 cup I Can't Believe It's Not Butter! Fat Free

Recipe Directions for Apple Cranberry Cake

  1. Put all dry ingredients into a bowl and mix well.

  2. In a separate large bowl, mix Egg Beaters, orange juice, cottage cheese, and I Can't Believe It's Not Butter.

  3. Add dry ingredients to wet ones a little at a time, while beating with mixer or wire whip. Fold in apples and cranberries.

  4. Bake at 375 in Bundt pan sprayed with PAM for 1 hour. Cool before removing from pan.
