Apple Cranberry Bran Muffins Recipe

Moist, tender and good either hot or cold. Seal them in a zip-lock as soon as they cool or they will begin to dry out. Dense texture that reminds one of vitatop muffin tops. Great recipe adapted from one found on line.

Recipe Ingredients for Apple cranberry bran muffins

1 cup wheat bran
3/4 cup fat free milk
1 1/4 cup whole wheat flour
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1/4 cup brown sugar
3 teaspoons splenda
1/3 cup applesauce, unsweetened
2 egg whites
1 tablespoon vinegar
1 apple, peeled and chopped
1/3 cup cranberries, dried, chopped

Recipe Directions for Apple cranberry bran muffins

  1. Mix milk and bran and let stand to soften for a few minutes.

  2. Meanwhile, in another bowl blend together remaining dry ingredients, then blend in cranberries (I use craisins).

  3. In a third bowl combine egg whites, applesauce and vinegar.

  4. Mix all three bowls together at the same time only until moistened then add chopped apple.

  5. Spray muffin tins and evenly distribute the batter between 18 tins.

  6. Bake at 400 degrees about 13-14 minutes.
