Apple, Cranberry and Almond Loaf Recipe

Healthy breakfast or snack, made without fat. Try to use apple juice infused dried cranberries rather than those sweetened with sugar. Alternatively you could use dried cherries, blueberries or raisins.

Recipe Ingredients for Apple, cranberry and almond loaf

1/2 cup porridge oats
300 ml skimmed milk
1 1/2 cups plain flour
3 teaspoons baking powder
1 teaspoon cinnamon
65 g dried apple
100 g dried cranberries
30 g sliced almonds
1 egg
1/3 cup honey
1/3 cup brown sugar

Recipe Directions for Apple, cranberry and almond loaf

  1. Pour the milk onto the oats and leave it to soak for 10 minutes.

  2. Meanwhile, sieve the flour, baking powder and cinammon into a bowl.

  3. Add the dried apple, cut up into little pieces, the cranberries and the almonds.

  4. Beat the egg and add to the dry mixture along with the honey and sugar.

  5. Add the milky oats and mix together lightly.

  6. Pour into a large lined loaf tin and bake for 35 - 45 minutes at 180 degrees celcius.

  7. When cool, it can be sliced and kept in the freezer ready for toasting, or it will keep well in an airtight tin for a few days too.
