Recipe Ingredients for Apple Coffee Cake

1/2 cup packed brown sugar
1 tbs. cold butter
1 tsp cinnamon
1/2 tsp nutmeg
1 c. packed brown sugar
1/2 c. granulated sugar
1/2 c. butter
1 egg
1 c. soured milk or buttermilk (see note below)
1 tsp vanilla
2 c. flour
1 tsp baking soda
1 tsp salt
2 c. chopped green apple

Recipe Directions for Apple Coffee Cake

  1. Make your topping first. Combine everything, except nuts, in a medium bowl and work the ingredients with a fork or pastry blender until coarse crumbs form. Stir in chopped nuts; set aside.

  2. To make the cake batter, cream the brown sugar and butter together in a large bowl.

  3. Beat in the egg until blended.

  4. Add the buttermilk and vanilla; stir well.

  5. Combine the flour, baking soda, and salt; stir into the wet batter until well mixed.

  6. Fold in the apple.

  7. Pour batter into a greased 9x13-inch baking pan.

  8. Sprinkle the topping over the batter.

  9. Bake 350 F. for about 40 minutes or until it tests done.

  10. NOTE:

  11. To sour milk when none is available, add 1 teaspoon cider vinegar to 1 cup of milk. Let it stand about 5 minutes, or until it coagulates.

  12. You can use apples or rhubarb. Both are great.
