This is a low calorie alternative to apple pie. No crust, just uses cereal to make it a kind of cobbler/pie. You can also just use a single apple for an individual serving and make it in the microwave (adjust other ingredients proportionately). I sometimes pour a bit of Walden Farms caramel syrup on it, just for the heck of it.

Recipe Ingredients for Apple Cobbler Pie with Kashi Crust

6 medium granny smith apples
2/3 c Splenda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
2 tbsp All-Purpose flour
1/2 c Fiber One Cereal (divided use)
1 c Golean Crunch! Original

Recipe Directions for Apple Cobbler Pie with Kashi Crust

  1. Core and slice apples thinly.

  2. Mix apples with flour, Splenda and spices

  3. Prepare pie plate: Spray briefly with non-stick canola spray

  4. Crush 1/4 c Fiber One cereal (use sandwich bag and rolling pin)

  5. Use the crushed Fiber One to dust the bottom and sides of pan, leaving excess on bottom.

  6. Place apple mixture into pie pan

  7. Cover lightly with foil (spray lightly with non-stick spray) and bake at 350 for about 45 minutes (apples should be soft)

  8. Press the apples down into the pan to compress and cover tightly with the foil.

  9. Bake another 10-15 minutes.

  10. Let cool to room temp to set.

  11. Before serving, crush slightly and sprinkle the Kashi Crunch and remaining 1/4 c Fiber One over over the top.

  12. Keep leftovers in fridge.
