Recipe Ingredients for Apple Cinnamon Rolls 2

10 3/4 ounces flour
0.19 ounces salt
3/4 ounces sugar
0.11 ounces instant yeast, I use SAF gold
1/2 egg, at room temp slightly beaten
1 ounce butter, soft
6 ounces buttermilk, at room temp
2 tablespoons flour
75 grams brown sugar
1 tablespoon cinnamon
2 tablespoons butter
50 grams pecans, chopped and toasted
1 large apple, chopped finely
1 1/2 cups powdered sugar
1/4 cups buttermilk
2 tablespoons butter

Recipe Directions for Apple Cinnamon Rolls 2

  1. In a large bowl, whisk together the first 4 ingredients.

  2. Add the next 3 ingredients and stir with a wooden spoon (or your hands) until fully incorporated.

  3. Turn the dough onto a floured surface and knead for 8-10 minutes. You can tell that the dough has been thoroughly kneaded when you can take a small (2") piece of dough and stretch it into a thin "windowpane" without it tearing.

  4. Spray the bowl with a small amount of cooking spray. Form the kneaded dough into a ball and place into the bowl, then spray a bit of cooking spray on the top.

  5. Cover the dough with a towel and let it rise in a warm place for 1.5-2 hours, or until the dough has doubled in volume.

  6. After the dough has risen, take it out of the bowl and gently deflate it. Pull the edges of the dough together and tuck them in to form a ball.

  7. Place the ball of dough back in the bowl and let it sit for 20 minutes.

  8. Turn dough out onto a floured surface and roll into a roughly 8x15" rectangle. If the dough becomes too elastic and difficult to roll, let it sit for 10 minutes and then keep rolling.

  9. Combine 2 tablespoons flour, 75 grams of brown sugar, and 1 tablespoon cinnamon in a small bowl. Cut in 2 tablespoons of butter until the mixture resembles wet sand. Mix in the pecans.

  10. Sprinkle the brown sugar-pecan mix evenly over the rectangle of dough and then sprinkle the chopped apple evenly over the brown sugar-pecan mix.

  11. Roll up the dough tightly, starting at the 15? side. Pinch the edges and the ends closed to prevent the whole thing from unrolling.

  12. Use a sharp, preferably serrated, knife to cut the roll into 12-16 equal pieces. Grease either a 9x13? pan or two 8-9? square or round pans and place the cut rolls in the pan.

  13. Let the rolls rise for 1-1.5 hours (or until doubled in size). When they have 20-30 minutes left to rise, preheat the oven to 350.

  14. Bake the rolls for 20-30 minutes or until lightly browned.
