Apple cinnamon pop 'em mini muffins

Recipe Ingredients for Apple cinnamon pop 'em mini muffins

2 cup all purpose flour
1 cup whole wheat flour
1 cup white sugar
1 tsp salt
3 tsp baking powder
2 tsp cinnamon
1/3 cup vegetable oil
1/3 cup unsweetened apple sauce
2 eggs
4 apples, peeled, cored, chopped

Recipe Directions for Apple cinnamon pop 'em mini muffins

  1. Pre heat oven to 400 degrees. Grease mini muffin cups.

  2. In a large bowl, combine all the dry ingredients.

  3. In a small bowl combine oil, egg and milk. Add to dry ingredients.

  4. Fold in apples.

  5. Fill mini muffin cups 2/3 full

  6. Bake for 10-12 minutes or until toothpick inserted into center of muffin comes out clean.
