A yummy addition to the breakfast table. Add unsweetened applesauce with Splenda or fat-free whipped topping.

Recipe Ingredients for Apple-Cinnamon Pancakes

1 1/4 c flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
1 c buttermilk
1/2 c unsweetened applesauce
1 tbsp vegetable oil
1 tsp vanilla extract
1 large egg, lightly beaten
1/2 c apple, diced
1 cooking spray

Recipe Directions for Apple-Cinnamon Pancakes

Mix first six ingredients in a large bowl with a whisk. Mix next four ingredients in a small bowl with a whisk. Combine liquids and dry ingredients together until whisked smooth. Add apples in last. On a hot griddle or skillet, pour 1/2c of batter and cook on one side until bubbles are on top and edges look golden brown. Flip and cook another 4-5 minutes.
