Recipe Ingredients for Apple Cinnamon Oatmeal Protein Pancakes

1/3 Granny Smith apple, thinly sliced
1/4 cup oatmeal, (quick cook)
2 tbsp almond meal
2 tbsp wheat germ
1/4 cup fat free cottage cheese
2 large egg whites, whipped
4 tbsp unsweetened apple sauce
1 tsp vanilla
1 tbsp cinnamon
1 large banana, mashed
1 tbsp flax seed
3/8 tsp baking powder

Recipe Directions for Apple Cinnamon Oatmeal Protein Pancakes

  1. Combine mashed banana with oatmeal, almond meal, wheat germ, and flax to form a thick paste. Add cottage cheese, egg whites, and applesauce.

  2. Mix thoroughly.

  3. Add vanilla and cinnamon to taste (amounts are approximate), and baking powder.

  4. Fold in apple slices

  5. Coat pan with light spray of canola oil (not included in calorie count/nutrition)

  6. Set heat to med-high

  7. Pour batter into 4 small pancakes, approximately 1/4 cup of batter each

  8. Pat each into a thin patty with a fork or spatula

  9. Cook slowly on each side until lightly browned and firm in the middle
