Healthy Apple Cinnamon Oatmeal Muffins

Recipe Ingredients for Apple Cinnamon Oatmeal Muffins

1 cup whole wheat flour
1 cup rolled oats
1/3 cup Blue Agave
1 teaspoon molasses
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup almond milk
1/2 cup navy beans
2 eggs, lightly beaten
1 teaspoon vanilla
1 1/2 cups chopped apples

Recipe Directions for Apple Cinnamon Oatmeal Muffins

  1. Preheat oven to 400F and grease a muffin pan.

  2. In a large bowl, stir together flour, oats,, cinnamon, baking powder, and salt. In another bowl, stir together milk/water, eggs, pureed beans,agave, molasses and vanilla until blended. Add dry ingredients and combine. Stir in apple.

  3. Spoon batter into prepared muffin cups and bake for 15-20 minutes or until a muffins pass the toothpick test.

  4. Allow muffins to cool on a wire rack for five minutes before removing from pan to continue cooling.

  5. Serve warm or completely cooled
