Recipe Ingredients for Apple Cinnamon Oatmeal Muffins

1 cup soy milk
1 cup quick oats
1 cup all purpose flour
1/4 cup brown sugar
1/4 cup applesauce
1 egg
1/2 tsp sea salt
2 tsp baking powder
2 tsp cinnamon
1/4 cup raisins

Recipe Directions for Apple Cinnamon Oatmeal Muffins

  1. Combine milk and oats and set aside for 15 minutes

  2. Sift together dry ingredients

  3. Beat egg and applesauce, add to oat mixture

  4. Combine wet and dry ingredients until just mixed

  5. Bake in a greased muffin pan at 425 F for 20-25 minutes or until toothpick inserted in the middle comes out clean.
