Oat, cinnamon, raisin and apple muffins, very healthy.

Recipe Ingredients for Apple-Cinnamon-Oat Muffins

1 cup regular oats
1/2 cup 2% milk
1 cup whole wheat flour
2/3 cup flour
1/2 cup sugar
1 tablespoon brown sugar or pearl sugar
2 tablespoons butter
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, lightly beaten
2/3 cup raisins
4 apples
1/2 cup yogurt, fat-free plain

Recipe Directions for Apple-Cinnamon-Oat Muffins

peel, core and chop apples. melt butter. mix all wet ingredients. add raisins and chopped apples. sift flours and powders together, replace 2 tbsp white sugar for pearl sugar or demarara, then mix remaining white sugar in. sift dry into wet, add bran left in sieve from whole-wheat flour. fold ingredients together very lightly, until everything is incorporated. spray 24 (or 12 for a commercial-size muffin) muffin cups with light cooking spray, and divide mixture between them. top with sugar crumbs and bake at 350F for 15 minutes or until a fork comes out clean.
