Recipe Ingredients for Apple Cinnamon Muffins

3/4 cup unbleached flour
3/4 cup whole wheat flour
1 1/2 teaspoons cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup oat bran
1/4 cup brown sugar
2 tablespoons canola oil
1 egg
1 1/2 cups shredded apples

Recipe Directions for Apple Cinnamon Muffins

  1. Coat 12 muffin cups with nonstick spray. Set aside.

  2. In a medium bowl, combine the flours, cinnamon, baking powder, and baking soda.

  3. In a large bowl, beat the buttermilk, bran, brown sugar, oil, and egg.

  4. Stir flour mixture into the buttermilk mixture until just combined. Fold in the apples.

  5. Spoon the batter into the muffin cups. Bake at 400F (200C) until done, 18 to 20 minutes. Let cook for 5 minutes, remove from pan and cool on a wire rack.
