This recipe I got from one of my Bikini Bootcamp Instructors. The recipe states it makes 12 muffins; however, I like to make my muffins big, so you may have to adjust your serving size when you make these. It asks for brown sugar splenda; however, roger's golden yellow sugar works and does not change the overall nutritional values for this recipe; where the bottom line is concerned, it's much more affordable, and it's natural (so it's better for you too). If you don't wanna go out and get this sugar though, brown sugar will work just fine, but it close to doubles the overall sugar value.

Recipe Ingredients for **Apple Cinnamon Muffins

1 cup old fashioned oats
1 cup skim milk
1 cup whole wheat flour
1 tsp cinnamon
1/2 cup brown sugar splenda
1/2 cup unsweetened apple sauce
2 egg whites
1 tsp baking powder
1/2 tsp baking powder
1 tsp granulated sugar
1 tsp cinnamon

Recipe Directions for **Apple Cinnamon Muffins

  1. Soak oats in the milk for at least one hour.

  2. Preheat oven to 400F.

  3. Grease muffin tins with margarine, and lightly dust with flour.

  4. Combine oat mixture with applesauce and egg whites until just mixed. Set aside.

  5. In another larger bowl, whisk dry ingredients together. (excepts for granulated sugar and cinnamon)

  6. Pour wet ingredients into the dry mixture, and whisk just until all mixed (over mixing will result in tough muffins)

  7. Pour mixture into muffin tins.

  8. Mix cinnamon and granulated sugar together and sprinkle on the top of each muffin.

  9. Bake for approximately 20 minutes.

  10. Remove from pan, and cool.
