Apple Cinnamon Muffins Recipe

A variation on my banana bread recipe - this one uses apples!

Recipe Ingredients for Apple cinnamon muffins

1 1/3 cup flour
3/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
5 1/3 tbs unsalted butter
2/3 cup sugar
1/2 cup egg beaters
4 oz lite applesauce
1 granny smith apple
1/2 tsp cinnamon

Recipe Directions for Apple cinnamon muffins

  1. Heat applesauce and cinnamon over medium low heat. Add diced apple and stir occasionally until apples become soft.

  2. In the meantime, wisk dry ingredients.

  3. Beat butter and sugar on high until lightened in color and texture (2-3 min)

  4. Beat in flour mixture until the consistency of brown sugar.

  5. Gradually beat in eggs.

  6. Fold in apples until just combined. (optional-fold in 1/2 cup coarsely chopped walnuts-nutiritional info not included)

  7. Scrape into standard size muffin cups and bake for 20-25 min. at 350 degrees until a toothpick inserted in the center comes out clean.

  8. Let cool 5-10 min before unmolding to cool completely on rack.
