A great way to use up those bruised apples

Recipe Ingredients for Apple Cinnamon Muffins

1/2 cup margarine
3/4 cup white sugar
1 egg, beaten
1 c. skim milk
1 tbsp lemon juice
1 tsp salt
1 1/2 cups apples, diced
1 cup all purpose flour
3/4 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon
3/4 tsp cinnamon
2 tbsp white sugar

Recipe Directions for Apple Cinnamon Muffins

  1. Blend margarine, sugar and egg until smooth.

  2. Combine milk with lemon juice. To this add salt and apples.

  3. Stir together flour, soda, cinnamon and add to apple mixture only to moisten.

  4. Spoon into muffin cups.

  5. Sprinkle with topping (cinnamon & sugar)

  6. Bake at 375 for 20-23 min.
