Recipe Ingredients for Apple Cinnamon Muffins

1/2 cup margarine
3/4 cup white sugar
1 egg, beaten
1 cup skim milk
1 tbsp lemon juice
1/2 tsp salt
1 1/2 cups apple, diced
1 cup all purpose flour
3/4 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon
2 tbsp white sugar
1 tsp cinnamon

Recipe Directions for Apple Cinnamon Muffins

  1. Blend margarine, sugar and egg until smooth.

  2. Mix milk & lemon juice.

  3. Add milk mixture, salt, apples to margarine mixture.

  4. Mix flours, baking soda, cinnamon and stir into wet ingredients until moistened.

  5. Spoon into muffin pan and sprinkle sugar/cinnamon on top of each.

  6. Bake at 375 for 20 min.
