This is a light and fluffy muffin and can be used with other fruits.

Recipe Ingredients for Apple Cinnamon Muffins

1/4 cup skim milk
1 tsp. baking powder
1/2 tsp. salt
1 cup chopped apples
3/4 cup sugar
1 egg
1/3 cup butter
1 1/2 cup flour
1 tsp. cinnamon

Recipe Directions for Apple Cinnamon Muffins

Mix egg, butter and sugar together. Add milk, then dry ingredients. Add chopped apples. Mix together and put in muffin cups. Bake at 375 degrees for 20 - 25 minutes - until golden brown and the center bounces back.
