Moist apple cake/muffin. This recipe makes 12 muffins and one cake.

Recipe Ingredients for Apple & Cinnamon Cream Cheese Cake/Muffins

400 g flour
50 g quinoa flour
3 tsp baking powder
1/2 tsp salt
400 g sugar
220 g extra light creme cheese
180 g creme cheese
125 ml grapeseed oil
125 ml olive oil
4 eggs
2 tsp vanilla
735 g granny smith apple , peeled and chopped
50 g sugar
4 tsp cinnamon

Recipe Directions for Apple & Cinnamon Cream Cheese Cake/Muffins

  1. preheat oven to 175 degree C and spray 9 inch spring-form pan with cooking spray (or lining with baking paper)

  2. Beat sugar, oil, vanilla and cream cheese until well blended. Add eggs 1 at a time and beat until blended after each. Combine flour, baking powder, and salt. Add dry to creamed mixture and beat on low til blended.

  3. Combine 50g cup sugar and cinnamon. Combine half cinnamon mixture and all the apples and mix to coat. Stir apple mixture into batter. Pour half the batter (it is THICK) into a 9 inch spring form and sprinkle with remaining cinnamon mix. Pour remaining batter into muffin tray lined with case.

  4. Bake for 1 hour 15 minutes or until cake pulls away from pan at sides or a toothpick comes out clean. For muffins, bake 25 minutes. Don?t be afraid-it takes a long time to bake, maybe even longer than written. If it gets too brown cover it loosely with foil.

  5. This is under dessert but it is the best breakfast ever.
