Supposedly a vegan muffin recipe but actually has a squdgy texture like a brownie. whatever they are, they're really good.

Recipe Ingredients for Apple Cinnamon Cake

16 oz plain flour
2 oz sugar
1 tsp baking powder
1 tbsp cinnamon
3 bananas
4 fl oz oil
12 fl oz soy milk
3 apples

Recipe Directions for Apple Cinnamon Cake

  1. Pre-heat oven to 300 degrees f.

  2. mix dry ingredients together lightly

  3. mash banana and dice apple

  4. add oil, soy milk and mashed banana to dry ingredients

  5. lightly mix in diced apple

  6. pour into oiled tins (either muffin or brownie depending on what you want)

  7. bake for 45-60 minutes testing with a knife to see if baked.

  8. they keep well in a tin for more than 3 days (but mine never seem to last that long)
