High in fiber apple cinnamon muffins that are delicious!

Recipe Ingredients for Apple Cinnamon Bran Muffins

1/2 cup whole wheat flour
1/2 cup flour
1 1/4 tsp baking powder
1 1/4 tsp baking soda
2 tsp vanilla
2/3 cup brown sugar
1/4 cup splenda
1 cups apple, chopped
2 tsp cinnamon
1/4 tsp cloves
1 egg
1 1/2 cup wheat bran
6 ounces yogurt, nonfat
1/4 cup skim milk
2 tablespoons honey
1/4 cup applesauce, unsweetened
5 ounces great northern beans, pureed

Recipe Directions for Apple Cinnamon Bran Muffins

  1. Preheat over to 375 degrees.

  2. These are also good and about 20 calories less if you use half of the brown sugar, leaving everything else the same. You can also play with the cinnamon and cloves as it suits you.

  3. Open 15.5 ounce can of great northern beans.

  4. Rinse well and drain.

  5. Put beans in blender with 1/2 cup water and puree until smooth.

  6. Divide bean mixture and freeze half for another time.

  7. Mix wheat bran with all wet ingredients, including beans. Don't worry, you absolutely won't notice the pureed beans!

  8. Let sit for about 10 minutes while you add all dry ingredients and apples on top of wheat bran in bowl.

  9. Mix all ingredients until evenly moist.

  10. Drop by spoonful into greased muffin papers in muffin tin until all muffin papers are equally full.

  11. If no muffin papers, grease muffin pan and when muffins are done and you take them out of the oven, place pan on wet towel on counter for a few minutes. Muffins come out cleanly!

  12. Bake at 375 degrees for 17 minutes or until muffin tops spring back when touched.

  13. Makes 12 delicious muffins.
