Delicious muffins that are actually semi-good for you :) I used Jicama because it was something i just had around the house. Of course it can be left out :) Same with the wheat germ. They both just add a little more nutritional value.

Recipe Ingredients for Apple-Cinamon Bran Muffins

1/3 cup nonfat plain yogurt
2/3 cup applesauce
1/3 cup apple
1/3 cup carrot
3 tbs Jicama
3 eggs
3 tsp baking powder
2 tbs cinnamon
4 tbs brown sugar
1 1/2 cup wheat bran
1/4 cup whole wheat flour
1/4 cup oatmeal
1 tbs wheat germ

Recipe Directions for Apple-Cinamon Bran Muffins

  1. Preheat oven to 375

  2. Puree apples, carrots, jicama

  3. Stir apples, carrots, and jicama with yogurt, applesauce, eggs, baking powder, cinnamon, and brown sugar

  4. Stir in wheat bran, oatmeal, whole wheat flour, and wheat germ

  5. Bake in a greased muffin pan for 35 minutes or until a knife inserted comes out clean
