From Eating Well Cookbook, this is more like a chicken stew.

Recipe Ingredients for Apple Cider Chicken

1/4 c flour
1/2 tsp salt
1/2 tsp pepper
1 1/2 pounds chicken breast, skinless & boneless, cubed
1 tbsp olive oil
1 medium onion, quartered & sliced
1 c apple cider
14 oz can diced tomatoes, drained
1 tbsp fresh basil, chopped
1 tsp fresh orange zest

Recipe Directions for Apple Cider Chicken

  1. Dredge chicken in mix of seasoned flour.

  2. Heat oil in heavy nonstick pan.

  3. Brown chicken on medium heat until meat is white on all sides. Do not crowd meat. Remove chicken and set aside.

  4. Saute onion in the same pan, maybe adding a little cider if needed.

  5. Add tomatoes & cider to pan.

  6. Bring to a simmer, then add chicken and simmer, covered, 20 minutes.

  7. Add basil and zest & simmer, uncovered, 10 more minutes.

  8. Serve over rice or pasta.
