Light and moist with chunks of apple and bursts of cheddar cheese. These muffins are surprisingly delicious.

Recipe Ingredients for Apple Cheddar Muffins

2 small Apples
1/2 cup Applesauce, unsweetened
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 cup cheddar cheese, 2%
3 eggs
1 1/2 cups flour, all purpose
1 1/2 cup milk, nonfat
4 tbsp. oil, canola
1 cup soy protein isolate
2 tsp. splenda
1/2 cup water

Recipe Directions for Apple Cheddar Muffins

Stir the dry ingredients together in a large bowl. Add the milk, water and applesause and stir until all the dry ingredients are moist. DO NOT OVERMIX. Peel, core and dice the apples. Add the apples, cheddar cheese, oil, vanilla and eggs and stir to incorporate. Let the batter rest while you heat the oven to 400 degrees. When the oven is hot, drop the batter into cups of muffin tin misted with cooking spray, (cups will be full). Bake for 10 to 15 minutes, reduce temperature to 375 and bake an additional 10 minutes,or until the tops have browned and a toothpick inserted into the center of a muffin comes out clean.
