Recipe Ingredients for Apple Carrot Zucchini Muffins

120 g carrots (1 small)
110 g zucchini (1 small)
220 g apples (1 big)
50 g flour
50 g whole wheat flour
2 teaspoons baking powder
20 g ground hazelnuts
30 g oats
60 g honey
1 egg

Recipe Directions for Apple Carrot Zucchini Muffins

  1. In a bowl, grate zucchini and carrot. Cut the apple into small chunks.

  2. Preheat the oven to 340 degrees F. Prepare muffin pan.

  3. In another bowl, cream the egg and honey with a pinch of salt. Add the grated veggies, oats and ground hazelnuts.

  4. Mix baking powder and flours and add to the egg mixture. Stir until just combined.

  5. Fold in the apples and pour the batter into prepared muffin pan.

  6. Bake for about 30 mins.
