Recipe Ingredients for Apple-Carrot-Raisin Breakfast Muffins

1 cup flour
1 1/4 cup whole wheat flour
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
2 eggs
1/4 cup whole milk
1/4 cup vegetable oil
1 cup apple
1 cup carrot
1/3 cup raisins
1 tsp lemon juice

Recipe Directions for Apple-Carrot-Raisin Breakfast Muffins

  1. combine dry ingredients in large bowl

  2. make a well in the middle and pour beaten eggs, milk and and oil at once

  3. stir just to moisten

  4. fold in apples, carrots, raisins and lemon

  5. fill greased or lined muffin cups 2/3 full

  6. bake at 400 for 10 - 12 minutes
