Quick cold salad with apples, celery, onions, and carrots in a balsamic vinaigrette. Be sure to season with Salt and Pepper. Also lovely with a slice or two of fresh jalapeņo, finely diced.

Recipe Ingredients for apple carrot chop salad

1 cup chopped apple
3/4 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped onion
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 Salt to taste
1 Fresh ground pepper to taste

Recipe Directions for apple carrot chop salad

Chop onions, celery. Mince jalapeņo. Add to a bowl. Pour on vinegar and oil. Toss and let set for 20 minutes. Chop apple (1/4-inch to 1/2-inch pieces) and carrot. A food processor is good for chopping the carrot. Mix all ingredients.
