Recipe Ingredients for Apple Buttermilk coffee cake

1 1/2 cups apples
3 tablespoons brown sugar
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/3 cup granulated sugar
2 tablespoons butter, softened
1 large egg
1 1/2 teaspoon vanilla extract
1/2 cup skim milk

Recipe Directions for Apple Buttermilk coffee cake

  1. Peel and thinly slice apples. Mix with brown sugar and lemon juice and cinnamon over medium high heat in a small saucepan. Simmer 4 minutes or until syrupy.

  2. Combine butter and sugar with a heavy mixer until blended. Add egg and vanilla until well blended. Combine remaining dry ingredients and beginning adding to wet mixture, adding milk between turns. Pour into a greased 8-inch cake pan. Cover with apples. Bake at 350 for 30 minutes or until cake pulls away from sides of pan
