These muffins are a lower-calorie adaptation of the "Classic Bran Muffin" recipe at recipezaar.com. The original recipe called for 1/2 cup of raisins, which an extra 20 calories per muffin; the chopped apples provide a similar hint of sweetness and a similar texture and I feel pair better with the more natural coarse texture of a bran muffin. Also, the flour was eliminated from the original recipe; if this is a concern or proves problematic try adding two tablespoons of vital wheat gluten to the wheat bran/sour cream mixture; this adds about 6 calories per muffin and I haven't tried this substitution yet. I will update if and when I do! The original recipe also called for 2/3 cup of brown sugar; Splenda no calorie or Sugar Twin brown sugar calorie-free replacement are used here instead. The wonderful and versatile Butter Buds (sprinkles) are used instead of 1/3 cup oil; mix them in with the sour cream and use 1/3 cup of water. If Butter Muds Mix is used, simpy reconstitute it to the equivlent of 1/3 cup oil per package directions and eliminate the water from this recipe. Egg substitute is used for whole eggs, and, finally, instead of buttermilk this recipe calls for nonfat sour cream in order to replace some of the texture changed through the other substitutions. Yes, it does have more calories than lowfat buttermilk, so perhaps try the recipe both ways and reports back! You'd save an extra 9 or so calories per muffin...

Recipe Ingredients for Apple Bran Muffins - Adapted for lower calories

2 1/2 cups wheat bran
1 cup fat free sour cream
1 1/3 tbsp butter buds
1/3 cup water
1/4 cup egg substitute
2/3 cup splenda no calorie (or Sugar Twin)
1/2 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup chopped apples

Recipe Directions for Apple Bran Muffins - Adapted for lower calories

  1. Preheat oven to 375 degrees.

  2. Grease muffin cups or line with paper muffin liners.

  3. Prepare butter buds:

  4. Mix together wheat bran and sour cream, and butter buds; let stand for 10 minutes.

  5. Beat together water, egg substitute, Splenda or Sugar Twin, and vanilla and add to sour cream/bran mixture.

  6. Sift together baking soda, baking powder, cinnamon, and salt.

  7. Stir powder mixture into sour cream mixture, until just blended.

  8. Fold in chopped apples and spoon batter into prepared muffin tins.

  9. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
