11/20/2009 - Added 1 cup beet juice, omitted (forgot) the vanilla, this has double amt grated fruit as original recipe.

Recipe Ingredients for Apple Beet Oat Bars

4 cups rolled oats
4 scoops Pro Performance 100% Whey Protein
1 cup sunflower seeds
1 tbsp cinnamon
1 tbsp ground clove
1 1/2 tsp kosher salt
1 cup Raisins
3 eggs
2 cups apple cider
1 1/2 cup grated beet
1 1/2 cup grated apple

Recipe Directions for Apple Beet Oat Bars

  1. Preheat oven to 350, spray 9x13 pan & coat w/ almond meal (flour, flax meal, oat bran)

  2. Mix dry ing. including walnuts & raisins

  3. Cook beets till barely soft. Drain, saving juice and coarse grate; Grate apples w/ or w/out skin.

  4. Beat eggs; combine w/ vanilla, cider, beet juice & grated fruit.

  5. Stir wet into dry and pour into pan. Bake 20-30 min
