Apple Barley Pudding Recipe

Makes 4 servings



This is an Irish recipe, usually served with a dollop of whipped cream. It's good without the cream, but if you want, you can top it with nonfat yogurt sweetened with a little honey or maple syrup.

Recipe Ingredients for Apple Barley Pudding

2 cups water
4 tablespoons pearl barley
1 1/2 lbs apples (peeled, cored and sliced)
2 tablespoons sugar
1 tablespoon lemon juice

Recipe Directions for Apple Barley Pudding

  1. Put the barley in the water and bring to the boil. Add the sliced apples and continue cooking gently until the barley and apples are soft.

  2. Press through a sieve, or put through the blender, and put back in the saucepan. Add the sugar and lemon juice and bring to the boil again.

  3. Remove from the heat, allow to cool, and then chill.
