I had apples and bananas that were past there prime and no one in my hose would eat. so i came up with these lil mini muffins to enjoy.

Recipe Ingredients for apple banana cranberry min muffins

2 raw apples
2 bananas
1/2 c fresh cranberries
1 tsp baking soda
1/8 tsp salt
2 tbs pumpkin pie spice
1 tbs cinnamon
1/2 c splenda no calorie
1 tbs vanilla extract
2 cups whole wheat flour
1/3 c bread flour
1 c oats
2 c water

Recipe Directions for apple banana cranberry min muffins

In separate bowl mix baking soda, salt pumpkin pie spice, cinnamon,slpenda, vanilla,flours and oats. Peel and dice apples. then add to bowl. Peel and add banana to bowl. I had fresh frozen cranberries to i cut them into 1/4. Mix everything together. Spray mini muffin pan with cooking spray and drop about a teaspoon into each. Bake about 15 mins at 300.
